Ten Rooms is the brainchild of Ro Patel, a veteran of the Tampa Bay hospitality industry, and supported by a deep bench of Michelin-awarded professionals devoted to delivering unparalleled hospitality.

RO PATEL

FOUNDER

Ro started out his lifelong love affair with bar culture & classic cocktails under the guidance of some of the world’s most gifted bartenders in London while at the Atlantic Bar & Grill.  Moving to Tampa in 2007, His numerous projects locally include founder of Ciro’s Speakeasy, a waterfront resort style Tiki property in St Pete,  Anise Global Gastro bar, The Collection Bar @ The Hall on Franklin, and now at Ten Rooms where he sets a new bar for hospitality in Tampa’s thriving food and beverage scene.

ZACH PACE

CHIEF OPERATING OFFICER

Zach is an experienced operator in the food & beverage space, with one- and two-star Michelin experience. He was the Beverage Director and General Manager at Lazy Bear, a renowned two-Michelin star institution in San Francisco, and the Director of Operations for Aphotic, which he helped open and gain a Michelin star and the rare Green Star – a mere three months after opening in 2023. In 2020 he founded a successful wine business which was acquired three years later, and brings all his experience to bear at Ten Rooms as Chief Operating Officer.

PARKER BROWN

EXECUTIVE CHEF

Chef Parker is a world-class chef and inspirational leader, with experience opening Michelin-awarded concepts in San Francisco, Chicago, southern California, Dubai, and Tampa. Now calling California home, Chef Parker most recently opened and led Aphotic, earning a Michelin star and the rare green star just three months after opening. He divides his time between Florida and California, where he is opening a concept in 2025.

VINCENT BRISOTTI

CHEF DE CUISINE

Born in New York and raised in Tampa, chef Vincent brings a wealth of industry knowledge and experience in top fine-dining destinations, as well as a close connection to Tampa and Ybor City itself. Prior to Ten Rooms, he served as sous chef for the German Consulate before joining the team at Michelin-starred restaurant the Finch in Brooklyn. Most recently, he was the chef de cuisine for the famed eatery Roberta's Pizza as well as Blanca at Roberta’s, which earned two Michelin stars and was recently recognized as the 2nd best restaurant in New York by the New York Times.

LORENA IDROVO

PASTRY CHEF

Having worked in Chicago (Chicago Athletic Association), San Francisco (Palette, Jane the Bakery), and Galapagos islands (Galapagos Foundation/ Muyu), Chef Lorena’s culinary career spans the globe. Lorena’s experience includes some of the world’s most prestigious kitchens, such as London’s “The Clove Club” (2 Michelin stars), Medellín’s “Sambombi” (World's 50 best-Latin America), Chicago’s “The Aviary” (Alinea Group/World’s 50 best bars), and Manchester’s “Higher Ground” (Michelin Guide). In 2022 Chef Lorena opened her first Coffee and pastry shop “Mia Mia” in Guayaquil, Ecuador.
